On Cold days what food do you usually lean towards? Something warm, something that can sooth your body? Warm soup is a perfect example of not only a food that can make you feel warm, but can be a comfort food for many. Many cultures have different types of traditional soup however, some soups have similarities between each other. Sujebi (수제비) is a Korean traditional soup that consists of hand torn noodles. The broth is made with dried anchovies, kelp, onion, garlic and possibly a potato. The dough consists of a mixture of flour, water, salt and vegetable oil. Once kneaded you leave the dough to rest. Once the broth is prepared you pull the dough with your hand in to flat, thin pieces of dough that gets dropped into the boiling soup took cook. Once the dough is cooked you have a tasty soup dish to serve.
Sopa Chorreada is a soup shared amongst many Spanish countries. Just like Sujebi, Sopa Chorreada is most well-known for the way they make their noodles. The broth is prepared with a large onion, garlic, achiote, chicken(optional) and cilantro. The dough consists of mixing an egg, milk four and salt. The dough consistency is to be a little more on the liquid side. Depending upon what you have available, people have used the larger holes of a cheese grater, spoons, their hands, and so on to make the small noodles that land in the boiling broth to cook. Once the noodles are fully cooked, you have prepared Sopa Chorreada. You can top it with anything you would like.
Just like with most recipes Sujebi broth can change depending upon the tastes of the person by adding seafood, kimchi, meat, etc., Sopa Chorreada can also change depending upon the persons tastes. They can also add meat, seafood, vegetables and eggs to the broth. However, for both soups the broth is always delicious and the noodles stay soft and chewy. If you are craving soup on a cold day, maybe try cooking one of these culturally traditional soups.
